2011 Cabernet Sauvignon- Spring Mountain District, 1.5L -- $160
Dark purple in its youth the 2010 Spring Mountain Cabernet has an immediate core of pure black fruit, mostly Cassis and Blackberry. Full fennel/black licorice and crushed violets are also prevalent. The dark mountain earth minerality is balanced by sweet vanilla bean aromatics from the oak. The wine is quite plush with concentrated raspberry and more gravel mineral tones on the palette. The tannins this year are very firm, with natural mountain acid to balance demanding some time in the bottle to show its best.
